Bibim Guksu (Korean Cold Noodles)

This Bibim Guksu recipe is great for when you're in a rush and don't know what to make. The chewy noodles are so delicious and the sauce is refreshing and spicy. It takes less than 15mins to put together and is also a great lunch to pack for work!

Description

This Bibim Guksu recipe is great for when you're in a rush and don't know what to make. The chewy noodles are so delicious and the sauce is refreshing and spicy. It takes less than 15mins to put together and is also a great lunch to pack for work!


Ingredients:

  • 3-4 servings of thin wheat noodles

Sauce

  • 4 tbsp Gochujang (Korean chili paste) reduce for less spice

  • 2 tbsp soy sauce

  • 3 cloves garlic minced

  • 2 tbsp sugar or honey

  • 2 tbsp vinegar white or rice vinegar

  • 2 tbsp sesame oil

  • 1 tbsp toasted sesame seeds

Topping

  • Pickled radish

  • Chive oils

  • Plant-based meat

Instructions:

  1. In a large bowl, mix together all the ingredients for the sauce

  2. Bring a large pot of salted water to a boil and cook the noodles till done, then rinse in cold water

  3. Mix the noodles with the sauce until all the noodles are coated in the sauce

  4. Add toppings

  5. Enjoy!
