Vegan 부추전 (Buchujeon - Korean Chive Pancakes)

Crispy and salty, these chive pancakes are delicious! Filled with strips of fried chives in between crispy and chewy pancakes, this is the perfect addition to any dinner.

We love savory Korean pancakes, they're so easy to make and there are a variety of types you can make. Growing up we'd order the seafood and kimchi pancakes from the Korean restaurants near us. After going vegan, it was difficult to find options we could have, so we decided to make our own! This chive pancake is so aromatic and pairs great with the spicy vinegar dipping sauce.

Description

Crispy and salty, these chive pancakes are delicious! Filled with strips of fried chives in between crispy and chewy pancakes, this is the perfect addition to any dinner.


Ingredients:

  • 1 1/2 cup all-purpose flour

  • 2 tsp baking powder

  • 4 tbsp corn starch or potato starch

  • 1 1/2 tsp salt

  • 1 1/2 cup cold water

  • 3-4 cups chives

  • 2 cups nappa cabbage (sliced)

  • neutral oil (for cooking)

Dipping sauce

  • 1 tbsp soy sauce

  • 1 tbsp black vinegar

  • 1 tsp sesame oil

  • 1 tsp sugar (optional)

  • 1/2 tsp sesame seeds (optional)

  • Gochugaru or chili flakes/powder (optional)

Instructions:

  1. In a medium bowl, combine flour, baking powder, corn starch, and salt. Once mixed, create a well in the middle and stream in the ice water while mixing. A thick batter will form.

  2. Add the chives and cabbage and mix till all the veggies are covered in batter.

  3. Over medium-high heat, preheat a pan till hot. Add a generous coat of oil. Test to see if the oil is hot by dropping a piece of batter (if it bubbles and floats up immediately, your oil is ready)

  4. Reduce the heat to medium, scoop in your pancake batter and create an even and thin layer on the pan.

  5. When the top of the pancake looks partially cooked, use a spatula and gently release the pancake from the bottom of the pan, and then flip to cook the other side

  6. Cook for 3-5mins and transfer to plate and cut into several even slices.

  7. Cook the rest of the batter (repeats steps 3-6)

  8. As the pancakes cook, prepare your sauce by combining all the ingredients in a bowl.

  9. Enjoy with the dipping sauce!
