Sourdough Pancakes
Inspired by the Wreck It Ralph pancake bunny, we created the perfect fluffy pancakes. The key to these pancakes is using sourdough discard!
These pancakes are what weekend dreams are made of. They are super fluffy, perfectly sweet, and filled with chocolate chips. They're also a great way to use up sourdough discard. When feeding our sourdough starter, bob, we always struggle with what to do with the discard, however, these pancakes are the perfect solution.

Description
Inspired by the Wreck It Ralph pancake bunny, we created the perfect fluffy pancakes. The key to these pancakes is using sourdough discard!
Ingredients:
1 cup sourdough starter
1 tbsp maple syrup
1 - 1 ½ cup plant milk (adjust according to batter in 1tbsp increments after the first cup)
1 tbsp neutral tasting oil (plus more for cooking)
1 1/3 cup all-purpose flour
Pinch of salt
1/2 tsp baking soda
1 tsp baking powder
¼ tsp cinnamon (optional)
½ cup chocolate chips (optional)
Oil (for cooking)
Instructions:
In a large bowl, combine your wet ingredient with the sourdough starter.
In a medium bowl, combine your dry ingredients.
Sift the dry ingredient into the wet ingredient, using a spatula fold the ingredients together, when there are only a few speckles of dry flour left, add your chocolate chips and fold till the chocolate is mixed in. Be careful not to overmix or your pancakes won't be fluffy.
Heat a pan over high heat, once hot add a layer of oil. Using a paper towel, absorb excess oil (keep this paper towel since you'll use it to re-oil the pan between pancakes).
Add in a large ladle of pancake batter. Once the edge bubble looks a bit cooked, flip the pancake and cook for an additional 1-3 mins.
Cook the rest of the batter following steps 4-5.
Stack the pancakes and top with butter and maple syrup (or your choice of toppings).
