Egg Dumplings (蛋餃)

These golden nuggets are filled with a fragrant plant-based meat filling and usually served in soup.

Tradition

Egg dumplings are a staple for Lunar New Year's Eve. They are a symbol of the wealth and prosperity that is to come during the New Year. These dumplings require patience and time. Every year our Mom spends nights making dozens of dumplings so that they are ready for New Year's Eve. She would heat a large ladle with some oil and slowly make each dumpling. The ladle has to be hot enough to cook the egg and create a seal, while cool enough not to cook the filling.


Traditionally, it is made with beaten eggs and a pork filling. We knew that New Year's Eve wouldn't be the same without these dumplings, so we took matters into our own hands. Creating the perfect vegan egg dumplings that even fooled our 公公 (grandpa)!

Description

A traditional dish that is made in our family every Lunar New Year Eve, but veganized! We hope these nuggets bring you prosperity and wealth during the New Year 新年快樂!


Ingredients:

12 oz Just Egg

8 oz Impossible™ Meat (or plant-based meat of choice)

6 shitake mushroom (diced)

2 stalks scallions (diced)

1 tbsp ginger (minced)

2 cloves garlic (minced)

1 tbsp Shaoxing wine

2 tbsp soy sauce

1 tbsp sesame oil

½ tbsp mushroom bouillon

1 tsp white pepper powder

Oil


Instructions

  1. In a large bowl, mix Impossible™ Meat, Shaoxing wine, soy sauce, sesame oil, white pepper, mushroom bouillon, mushrooms, scallions, ginger, and garlic.

  2. Pour oil in a small frying pan or ladle and use a paper towel or brush to evenly oil the pan.

  3. Heat a pan on low heat and add 2 tbsp of Just Egg. Swirl the pan so the egg evenly coats the pan.

  4. Once the "egg" begins to bubbles add 1 tbsp of the meat mixture to one side of the pan.

  5. Use a chopstick to release one the side of the "egg" and fold it over to create a half-moon shape. Tap the edges to create a seal. Flip to ensure both sides are evenly cooked. And that's one!

  6. Repeat until you use up all your just egg, this recipe should make around 8-10 dumplings (the remaining meat mixture can be used to make vegan wontons!)

  7. Before serving pan fry the dumpling to make sure the meat filling is cooked, or add it to a stew and soup for 5-8 minutes.
