Roasted Cabbage with Jalapeño Lentils & Maple Tahini 🌶🍁

Salty, sweet, spicy, and everything else that's nice. This roasted cabbage is full of flavor and elevates the cabbage to a whole new level. Normally we just stir-fry cabbage to make a quick & delicious meal, however, last week our dad accidentally bought a whole cabbage when we already had one at home. To make use of the extra cabbage we decided to make roasted cabbage which uses almost half the cabbage and is a new exciting way to eat cabbage. We love the smoky and sweet flavor of the cabbage paired with the spicy tangy lentils and creamy luscious tahini. This is a new favorite recipe and we will definitely be making it again!

Ingredients:
3 1/2 inch slice of cabbage
Olive oil
Italian spice
Liquid smoke (optional)
Salt & pepper
Jalapeño lentil
3/4 cups lentil
3-5 slices of pickled jalapeño
2 cloves of garlic
2 tbsp olive oil
2 tbsp lemon juice
Salt
Red pepper
Maple tahini
1/4 cup tahini
1 tbsp lemon juice
1 tbsp maple syrup
Salt
1/3 cup ice water
Instructions:
Begin by cooking the lentils until tender (follow package instructions)
While the lentils cook, combine the diced jalapeño, garlic, olive oil, lemon juice, and salt in a small bowl.
Mix the jalapeño with the lentils once cooked and drained
Preheat the oven to 400F. Slice the cabbage into 1/2 inch pieces.
On a lined baking tray, brush the cabbage slices with olive oil and season. Adding liquid smoke help give it a more roasted & bbq flavor. Bake for 20-30mins or till slightly golden around the edges and tender.
While the cabbage bakes. Prepare the tahini.
In a blender combine tahini, lemon juice, maple syrup, and salt. Blend till incorporated, then slowly add cold water till it is a silky consistency.
Once the cabbage is cooked, assemble it on a plate by topping it with the lentils and tahini sauce.
Slice and enjoy!
