Chilling. Chilling the dough before scooping allows the dough to hold its shape and adds more flavor to the cookies.
Folding. By folding the batter the flour is incorporated into the dough, without overmixing. Overmixing can lead to a tough cookie.
Flaky Sea Salt. Don't skimp on the flaky sea salt (if it is accessible to you). This makes or breaks your cookies. The salt complements the sweet soft chocolate and chewy cookie.

Ingredients:
1 tbsp chia seed + 3 tbsp water
1/2 cup almond butter (substitution
1/2 cup sucanat
1 tsp vanilla extract
3/4 cup all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
2 tbsp plant-based milk
1/2 cup chocolate
flaky sea salt
Instructions:
Preheat oven to 350F (175C). And line a baking sheet with parchment paper or a silicone mat.
Blend chia seeds and combine with water, and let the mixture sit for a few minutes. In the meantime, whisk almond butter, sucanat, plant milk, and vanilla extract till well combined. Then add in the chia “egg” mixture.
Sift all-purpose flour, baking soda, and baking powder into the mixture. Using a spatula fold the mixture till all the flour is combined. Then fold in your chocolate chips.
Line a baking sheet with parchment paper. Using a spoon, shape the dough into balls (8-10 cookies). Use your palms to flatten the cookies and chill in the fridge for 15-30mins.
Bake for 10 mins then remove and add flaky salt. Then bake for another 3 mins or until edges are browned.
Allow cookies to cool and then enjoy with a glass of mylk
