Vegan Sourdough French Toast
The perfect french toast, gooey and sweet on the inside and perfectly crisp on the outside
We made a delicious loaf of sourdough bread yesterday and decided that it would be perfect for some french toast. It's gooey and sweet on the inside and perfectly crisp on the outside (plus if you have any leftover of the batter, you can make a killer loaf of banana bread!).
Our homemade sourdough, from BOB (our starter), helped make this french toast really shine. No worries if you don't have access to make your own loaf, any sourdough bread will work fine. If you can get a loaf that isn't pre-sliced, so you can create nice thick pieces for your french toast!
Traditional french toast often requires an egg batter to coat your toast in, we've recreated this batter without the cruelty. Our batter is composed of blended chia seeds, almond butter, almond milk, cinnamon, salt, and some maple syrup. This batter keeps the inside of the toast soft while developing the perfect crunchy crust on the outside.

If you want to go wild, you can add a scoop of your favorite vegan ice cream or make some nice cream to serve on top! Or add some coconut whipped cream! This french toast is so versatile and can be topped with whatever you like (or nothing at all if that's how you roll). We're thinking the next time we make this will layer some peanut butter between each slice! Honestly, the options are endless and we could go on writing what toppings to put on this, but we'll let you get creative with this recipe.

Ingredients:
8 slices of thick sourdough toast (or 10 if you use a thinner slice of bread)
2 tbsp chia seed
2 tbsp maple syrup
2 tbsp almond butter
1 cup almond milk
1 tsp vanilla extract
Pinch of salt
Cinnamon (as much as you like!)
Instructions:
Blend chia seeds, maple syrup, almond butter, almond milk, vanilla extract, salt, and cinnamon until smooth and let it sit for 5 minutes. This will allow the chia seeds to thicken the mixture.
Take some sourdough bread (or any bread of choice) and soak into the bread for 30 sec on each side.
Heat a skillet on medium to low heat with some oil. Then put in your soaked bread. Cook on both side for 3-5 minutes or until crisp.
Repeat until you’ve used up all of the mixture.
Enjoy with some maple syrup and fruit (or coconut whipped cream if you want to be fancy!)
