The Best Rice Krispie Treats Ever (Vegan)
Ooey-gooey nostalgic treat! These are the BEST Rice Krispie treats and they're so EASY to make!
Before going vegan, Rice Krispie treats were one of our favorite desserts/snacks to make. We were Rice Krispie treat experts, making huge batches to bring to pot lucks and events. One of the most difficult things about making non-vegan Rice Krispie treats was preventing the marshmallow from hardening after a few hours of making them. With vegan Rice Krispie treats this problem doesn't exist. We're not sure why, but we believe it has something to do with the chemical structure of vegan marshmallows!
wait... Rice Krispie Treats aren't vegan?!
Surprise! Marshmallows and your classic Kellogg's Rice Krispies aren't vegan (in fact they aren't even vegetarian).
Marshmallows. Not many people know this, but marshmallows, gummy bears, jello, and some candies contain gelatin. Gelatin is a protein made from the skin and bones of pigs and cows (yikes!). It is often used to make products like marshmallows and gummy bears chewy.
Kelloggs's Rice Krispie. Most cereals from Kellogg's and General Mills are fortified with vitamin D3 derived from lanolin, which comes from sheep :(
Butter. Most treats are made with butter, but this can be easily swapped.
No worries, there are plenty of vegan marshmallows in the market which act as a perfect substitute! And there are plenty of cereal companies who don't fortify their cereals with vitamins from animals, just make sure to do your research beforehand!
vegan substitutes we used:
Vegan Marshmallows. We used Dandies Vegan Vanilla Marshmallows. These taste, look, and feel like the original things. Instead of using gelatin, Dandies uses plant-based ingredients like tapioca starch to create that signature marshmallow chew. They melt like regular marshmallows, but it just takes a little longer.
Farmer's We Know Sprouted Brown Rice Crisp. There are a bunch of cereals similar to Rice Krispies that are vegan, we used the brown rice crips from Farmer's We Know, and our treats came out perfect!
Avocado Oil. A super easy swap for butter, if you want you can also use vegan butter, coconut oil, or any other neutral oil.

Ingredients:
6 tbsp avocado oil*
10 oz bag Dandies vegan vanilla marshmallows
1 tsp pure vanilla extract
5 cups rice crisp
Instructions:
Line a 9-inch square baking dish with parchment paper. Set aside.
In a large saucepan boil water, create a bain-marie (aka double broiler), and add a medium heatproof mixing bowl on top of the water.
Add your oil and marshmallows to the mixing bowl. Continue stirring until completely melted. (Covering the mixing bowl can help speed up the melting)**
Remove from heat and stir in the vanilla. Add the cereal and the remaining 1 cup of marshmallows.
Pour into the prepared baking dish. GENTLY spread out the mixture with your fingertips.
Let cool for 10 mins, then cut into squares and enjoy!

* you can use any other neutral-tasting oil or vegan butter
** be patient, vegan marshmallows take a little longer to melt
