While apple desserts are often enjoyed during fall, we couldn't resist making this in the winter. The brown butter truly brings this dessert to a whole new level. It brings a lovely aromatic flavor that pairs perfectly with the sweet apples. You will definitely find us baking this when fall approaches again.

how to make vegan brown butter

The process of making vegan brown butter is the same as making regular brown butter. In our recipe, we use Country Crock Plant Butter, however, any other plant-based butter will also work great!


Unlike plain melted butter, brown butter has a nutty, rich, aromatic flavor that is AMAZING! This is a rich and decadent dessert so make sure you keep some room in your stomach after dinner to enjoy this.

  • First, cut your butter into even pieces. This will speed up the melting process.

  • Next, heat a small pot over high heat.

  • Finally, add your butter. Once the butter has melted, make sure to stir frequently to ensure the butter browns evenly. Keep an eye on the color, once it has reached an amber brown, remove it from the heat. You'll be able to smell how amazing this butter is!

For the perfect Apple Cobbler, don't forget to top with a generous scoop of vegan vanilla ice cream! The cold and creamy ice cream pairs perfectly with the warm, buttery apple cobbler.

Ingredients:

1 pound (454g) Honeycrisp apple

⅓ cup (45g) coconut sugar (or brown sugar)

1 tsp ground cinnamon

¼ tsp nutmeg

10 tbsp (140g) Plant Butter

1 ½ cups (180g) all-purpose flour

1 cup (200g) organic cane sugar

¼ - ½ tsp kosher salt (depend on how salted your butter is)

2 tsp baking powder

1 ⅓ cups creamy oat milk

1 ½ tsp vanilla extract

For serving: vegan vanilla ice cream (optional)


Instructions:

  1. Preheat it to 375°F

  2. Cut the apples in half and remove the seeds, then cut the apples into ¼-½ inch thick slices.

  3. Transfer the apples to a medium or large bowl. Add the coconut sugar and cinnamon, and toss gently to combine. Set aside for 30 minutes to allow the flavors to infuse in the fruit.

  4. Heat a skillet or small pot over medium heat, then add the plant butter. Stir it often to ensure even browning and cooking, until it foams and then eventually browns. Be careful, the butter may splatter. The browning process should take 5-8 minutes. Take the browned butter off the heat and immediately pour brown into a deep baking pan.

  5. In a large bowl, combine the flour, oats, cane sugar, salt, and baking powder. Whisk in the oat milk and vanilla extract until well combined. Using a ladle or measuring cup, ladle the batter on top of the brown butter. Ladling the mixture helps the butter swirl and mix into batter. Top the cobbler with the apple mixture.

  6. Bake the cobbler for 45-50 minutes, rotating the pan 180° halfway through to ensure even browning. Once the top is deeply golden brown and bubbling it's ready to take out.

  7. Allow the cobbler to cool slightly before serving. Serve warm, we recommend topping it off with vegan vanilla ice cream!
