Vegan Chickpea Omelette

Omelettes are such a classic dish during breakfast. Growing up, our mom loved to make them for us on the weekends. She'd crack a few eggs, scramble them up, then cook and fill them with veggies. We've decided to recreate this favorite breakfast of ours, but egg-less š š»āāļøš£!
how do you create an omelette without eggs?
The main stars in this recipe are chickpea flour and turmeric! These two ingredients and a few other spices are blended together with water to create an egg batter.
Chickpeas are such an amazing bean, they're packed with protein and a rich source of vitamins, minerals, and fiber! For this recipe, we used chickpea flour from Thrive (get 25% off your first order with our link!). You can also find it at your local health food store.
Turmeric is an amazing superfood. The spice is known for its anti-inflammatory properties, ability to increase the antioxidant capacity of your body, and other amazing health benefits. In this recipe, the turmeric helps give the omelette it's vibrant egg-like color.
Black salt (kala namak) is a volcanic rock salt with a distinct sulfur smell and taste that mimics eggs. We didn't include this in our recipe since it's hard to find and quite expensive, but if you have it feel free to add a pinch to your egg batter.
Other spices like salt, pepper, and garlic powder were added to give the egg batter flavor.
This chickpea egg batter has a more pancake-like texture but is still a great alternative to eggs. In addition to using this egg batter, we also like to use JUST eggs. However, JUST egg is a pricier alternative, while this is affordable and extremely nutritious!
Filling
The fillings you add to your omelette is up to you. Here are some great options.

We also like to have the chickpea omelette with roti paratha. This can be found in the freezer section of your local asian food store. We like to use the Spring Home's frozen roti paratha and heat it up on a nonstick pan.
why go egg-less?
Ethics
Many people often don't know about the abusive and cruel nature of the egg industry. We grow up thinking that egg-laying hens are free to roam around in green pastures and no chickens are killed in the egg industry. However, this is far from the truth.
Male chicks. Whether you're buying free-range, pasture-raised, or cage-free eggs, these systems purchase their egg-laying chickens from commercial hatcheries. In these hatcheries all male chickens are killed within a few days after their birth. They're often killed in gruesome and terrible ways. Read more here.
Misleading labels. We often think eggs labeled "free-range" or "cage-free" means that the chickens live a great life on an open field, however, these labels are extremely misleading. For "cage-free" eggs, this simply means the chickens aren't in cages, instead they're all crammed into a windowless warehouse. The term "free-range" varies depending on local laws and is often not enforced. Eggs from hens enclosed in a warehouse could also be labeled as "free-range" even if the bird doesn't get to roam outside.
Debeaking. This is a standard procedure done on newborn chicks in the egg industry. Chicks have their beaks seared off without pain medication, an extremely painful process for sensitive newborns.
Environment
Although not as environmentally damaging as the dairy industry, the egg industry also play a big role in environmental degradation.
In 2018, an environmental study done by scientists of the University of Oviedo analyzed the effect of intensive egg production on 18 environmental categories. It was discovered that egg production most affected "the transformation of the natural earth and the water and land toxicity". Learn more about the study here.
Vegan Chickpea Omelette

Description
A twist to the classic breakfast/brunch omelette. This delicious protein packed meal is a great way to start your morning and will fuel you through the day! šŖš¼
Ingredients:
1 cup chickpea flour
1 tsp turmeric powder
salt and pepper to taste
1 cup water neutral cooking oil/vegan butter
Fillings (mushroom, onion, avocado, spinach, etc.)
Instructions:
In a medium bowl, mix chickpea flour, turmeric powder, salt, and pepper. Then slowly add water, till the mixture has the consistency of pancake batter.
In a non-stick pan, cook your fillings with neutral oil or vegan butter. Then season with salt and pepper to taste.
On medium heat, oil a non-stick pan. Once hot, add a thin layer of the egg batter and cook for 4-5 minutes, or till the omelette is dry. Flip and cook the other side.
When the omelette s lightly browned you can start adding in your omelette filling. And fold your omelette and serve!*
Note:
*if you're using vegan cheese, to speed up the melting process cover your pan and let it cook on low-medium heat.
