Zaru Soba

Refreshing cold noodles to enjoy during the summer. Zaru soba, aka cold soba noodles, is the perfect meal to enjoy in the summer heat.


The noodles are dunked in a bowl of mentsuyu dipping sauce which takes less than 10 mins to make! We were first introduced to this style of eating soba when dining at a Japanese restaurant, since then it's been one of our favorite ways to enjoy soba. The combination of the chewy noodles with the salty cold mentsuyu is so refreshing and unlike any other noodle recipe. And the best thing about this recipe is how simple it is. It is practically foolproof and requires less than half an hour to make.

Description:

Ingredients:

Mentsuyu

2 cups of dashi stock (we made it from scratch with 2 sheets kombu, 4 dried shiitake mushrooms and bring to boil, then simmer and cook for 30 mins)

1/2 cup soy sauce

1/2 cup mirin


Combine

Soba noodle

1 daikon radish (optional


Instructions:

Mentsuyu

1. Combine the dashi, soy sauce, and mirin in a pot and bring to simmer. Let simmer for 5 mins

2. Let the broth cool, then move to a container and refrigerate till you need to use it for your cold soba

Zaru Soba

  1. Cook soba noodles till chewy, rinse with cold water to keep the chew

  2. Grate daikon radish and squeeze all the water out till it forms a tight ball

  3. Assemble by putting a bit of the radish in the mentsuyu and then use the mentsuyu as a dipping sauce for your soba noodles

  4. Slurp away!
